pparently, nine out of ten people love chocolate. Of course, the tenth person lies. So, for ten out of ten people I’m making my ultimate chocolate tarts!
To make these yummy tarts first I’ll make chocolate sablé pastry. I will use it to line my round perforated tart molds. Then I’ll bake them and brush their interior with egg wash, so they don’t get soggy once I fill them.
Next, I will make hazelnut crunchy layer out of melted milk chocolate, hazelnut paste and feuilletine.Instead of pure hazelnut paste you can also use praliné paste. How to make it you can learn in . Feuilletine is a French word that means “small leaves”, and those are actually very thin sweet crushed wafer cookies. When they are mixed and coated with chocolate and hazelnut paste, they remain crispy and delicious, so you can incorporate them into various layered desserts to add some texture.
My tarts are going to be filled with smooth milk chocolate ganache, and then I will make caramel and dark chocolate mousse and fill my half sphere silicone molds with it. When my mousse freezes I will glaze it with dark chocolate glaze, and to make my tarts pretty I’ll make some simple .
