oday I’m making delicious and refreshing lemon and mint macarons! Now, most recipes call for French or Italian meringue method, like in my other posts – or . However, there is another meringue method, known as the Swiss meringue.
What is Swiss Meringue?
Swiss meringue method is, in my opinion, unfairly neglected, so I have decided to use it in my recipe today. BTW, if you are a newcomer to the world of sweetness, you probably ask what is Swiss, French and Italian meringue in the first place! Well, don’t worry, I got you covered! I have an elaborate post and video in which you can learn ! OK, back to the Swiss meringue!
Let me just say that you will need to put egg whites and sugar into a bowl, and then put the bowl on bain-marie and heat up the mixture until all the sugar crystals are dissolved. Now, this meringue’s main advantage is also its main disadvantage – go figure!
You see, macarons made by using French or Italian meringue are a bit fragile, meaning – it is sooo easy to overmix either one! This is not a good thing because overmixed macaron is a rather unappealing thing – runny, sticky and doesn’t hold its shape. Yuck! Now, Swiss meringue is much more resilient, so – it is extremely difficult to overmix macarons made using this method, and that is a good thing! On the other hand – this method requiers a little bit more work and elbow grease, but it is well wort the while, I promise! No pain, no gain, right?

Now, once I make my yellow and green macaron shells, I will make delicious white chocolate and lemon ganache and finally, I’ll show you how make mint jelly from fresh mint leaves!
