hese little strawberry and coconut spheres are coated with crunchy white chocolate rocher glaze, and placed onto almond sablé cookie. Yum!
First I will make almond sablé cookies that will be the base for my spheres. I will cut my pastry into oval shapes, and bake cookies until golden brown. Next, I will make strawberry mousse that I’ll pour into small half sphere silicone mold. Once my half spheres are frozen, I will stick two by two together in order to get small spheres, that I’ll place in the freezer until needed. Then I will make coconut mousse and pour it into medium sphere mold. I will insert one strawberry mousse small sphere into each cavity, and place everything in the freezer to set.
White chocolate rocher glaze is delicious and so easy to make! I will gently melt my white chocolate in the microwave. Then, I will add some vegetable oil and stir well to combine. I will add finely chopped almonds, and leave the glaze to cool down to 35°C (95°F). I will insert a wooden skewer into each frozen mousse sphere, and then I will dip it into the glaze. When the excess drips down, I will leave it to set. Easy-peasy!
Pink chocolate decorations are so fun to make! You can use strawberry flavored pink chocolate if you can get one, or you can dye your white chocolate with liposoluble pink coloring. You will have to the chocolate, but if you don’t feel like doing that, you can use candy melts by all means! Just melt them, shape your decoration as you like, and garnish your delicious strawberry and coconut spheres! :)
