y chocolate and cherry half spheres are made of chocolate and hazelnut sablé cookies, cherry jelly, cherry mousse, milk chocolate mousse and milk chocolate glaze. Yummy!
First I will make chocolate and hazelnut sablé cookies that will be the base of my half spheres. I will make the pastry, roll it out and cut into 9cm (3.5″) discs. Then, I’ll make cherry jelly that I’ll pour into small half sphere silicone mold. The diameter of my small half spheres is 2.5cm (1″). I will freeze my cherry jelly and continue making my half spheres.
Next, I will make cherry mousse. I will pour my mousse into medium half sphere silicone mold. The diameter of my medium half spheres is about 5cm (2″). I will insert one frozen small half sphere cherry jelly into the center of each mousse and place everything in the freezer to set.
While my cherry mousse is freezing I will make milk chocolate mousse and pour it into large half sphere silicone mold. The diameter of my large half spheres is 7.5cm (3″). I will insert one frozen medium half sphere into each mousse and put everything in the freezer to set. Then I will make milk chocolate glaze.
I will glaze my frozen chocolate and cherry half spheres, transfer them onto chocolate and hazelnut sablé cookies, and decorate them with some chopped hazelnuts, whipped cream, and one cherry on the top! Delish! :)
