What is Entremet?
Entremet is a word that comes from Old French language, literally meaning “between servings”. In French cuisine it historically referred to small dishes served between courses. Today, however, it more commonly refers to a type of dessert. And what a dessert it is! Entremet is visually appealing cake made of many different layers. The combination of layers is endless – often there is some sort of sponge cake, maybe a crunchy layer, a mousse, crémeux, some jelly etc. The intention of the pastry chef is always the same – when you, sweetness lover, take a bite – the miraculous symphony of flavors and textures should blow your mind!
Chocolate, Peanut and Orange Entremet Layers
In this tutorial I will show you how to make chocolate, peanut and orange entremet. I don’t have to describe how the combination of chocolate and peanuts taste, right? You can only imagine what will addition of salted soft caramel and orange do to this combo! Rich, crunchy, creamy, sweet and slightly salty, caramely, and a bit tangy… well, you just have to taste this one! Following my recipe, you will create six different layers and orange chocolate decoration. Of course, I will explain in detail how to make each layer, how to make the decoration, and how to assemble the entremet.
