What is Entremet?
Entremet is a word that comes from Old French language, literally meaning “between servings”. In French cuisine it historically referred to small dishes served between courses. Today, however, it more commonly refers to a type of dessert. And what a dessert it is! Entremet is visually appealing cake made of many different layers. The combination of layers is endless – often there is some sort of sponge cake, maybe a crunchy layer, a mousse, crémeux, some jelly etc. The intention of the pastry chef is always the same – when you, sweetness lover, take a bite – the miraculous symphony of flavors and textures should blow your mind!
Black Forest Entremet Layers
In this tutorial I will show you how to make black forest entremet. Now, why black forest? Well, because my entremet contains all the flavors of the classic black forest cake, which is of German origin (Schwarzwälder Kirschtorte). Black forest cake got its name after Schwartzwald or black forest when translated from German. One of the most important ingredient of black forest cake is Kirsch – cherry liqueur which also originated in Germany. Traditionally, the ingredients of Black forest cake are chocolate, cherries, cherry liqueur and vanilla. In my creation, the flavors are more pronounced, and the palate will be amused by a variety of textures. Following my recipe, you will create six different layers and white chocolate decoration. Of course, I will explain in detail how to make each layer, how to make the decoration, and how to assemble the entremet.

For making this entremet I will be using the most common pastry equipment, so you don’t need to purchase any additional tools and utensils. The building technique is based on two different size ring molds – smaller one for the insert, and a bit larger one for the final assembly.

You and your loved ones will be able enjoy in delicious, sweet, tangy and amazingly creamy combination of dark chocolate, white chocolate, cherries and vanilla that melts in your mouth. Yummy!!
