hocolate salami or “salame di cioccolato” is a simple dessert, of Italian origin, and it is very easy to make. It usually contains chocolate and cookies, so it is very useful if you need to organize your child’s birthday party, or as a quick sweet snack when preparing dinner for your friends.
The name “chocolate salami” is here because, at first sight, this sweet treat resembles a sausage, especially if you serve it on a cutting board – I am sure that at first glance not everyone will realize that it is actually a dessert.
In Sicily, it is also “salame turco” or Turkish salami, not so much for geographical reasons, but for the color given by the dark chocolate. In Italian region Emilia Romagna it is prepared especially during the Easter holidays, and in fact it is also a clever idea to reuse some of the chocolate from Easter eggs. In Piedmont, home of famously delicious hazelnuts, gianduia chocolate is often used, which in my opinion makes it even more delicious.
The basic recipe for chocolate salami involves a mixture of butter, eggs and melted chocolate, to which are then added crushed cookies and a splash of rum. Once everything is mixed, it formed into a shape of the salami and rests in the fridge. If you are using recipe that contains raw eggs, it would be preferable to use pasteurized ones, which can be found in the supermarkets. If the dessert is for your children’s snack, you can avoid adding rum or liqueur, and instead you can add some orange juice or more cream.
For a gluten-free version, just use gluten-free cookies, which are now easily found on the market (but don’t forget to check that the other ingredients are also gluten-free, even those you wouldn’t expect). If you want to make lactose-free chocolate salami, you can simply use lactose-free cream and butter (and take biscuits without milk or butter), or coconut cream and coconut oil.
I have decided to make egg free chocolate salami, since those will be safer to eat and to keep in the fridge (like I will have any leftovers to keep). So, for the dark chocolate salami, I used Lotus Biscoff cookies, cinnamon, almonds and candied orange, that I find to be delicious and Christmasy flavor. For the white chocolate version I wanted to incorporate something tangy to balance the sweetness of white chocolate, so I added some liqueur, pistachios and freeze dried raspberries. This combination is not only delicious, but the green pistachios and red raspberries are a perfect colors for this simple sweet snack. There, let’s make some chocolate salami!
How to Make Chocolate Salami

INGREDIENTS
Dark Chocolate Salami:
- Dark chocolate 55% cocoa solids 100g (3.5oz)
- Cream 35% 50g (1.8oz)
- Butter 30g (1oz)
- Rum 10g (1Tbsp)
- Cinnamon 2g (1/4Tsp)
- Lotus biscoff cookies, crushed 75g (2.6oz)
- Blanched almonds, toasted and chopped 85g (3oz)
- Candied orange 30g (1oz)
- Powdered sugar for dusting
White Chocolate Salami:
- White chocolate 150g (5.3oz)
- Cream 35% 50g (1.8oz)
- Butter 30g (1oz)
- Kirsch liqueur 10g (1Tbsp)
- Butter cookies, crushed 75g (2.6oz)
- Pistachios 85g (3oz)
- Freeze-dried raspberries 15g (1/2oz)
- Powdered sugar for dusting
- To make dark chocolate salami melt dark chocolate in the microwave on low heat. Add warm cream, and stir well until combined. Then add softened butter and stir until it melts.
- Add rum and ground cinnamon and stir well to combine.
- Next, add crushed cookies, chopped almonds and candied orange and stir until everything is incorporated. Leave this mixture on the counter until it starts to set.
- Put some cling film onto the counter, and transfer the mixture onto it. Wrap it, twist the ends and form it into a sausage shape. Then, place the salami in the fridge until it completely sets.
- To make white chocolate salami melt white chocolate in the microwave on low heat. Add warm cream, and stir well until combined. Then add softened butter and stir until it melts.
- Add kirsch liqueur and stir well to combine.
- Next, add crushed cookies, pistachios and freeze dried raspberries and stir until everything is incorporated. Leave this mixture on the counter until it starts to set.
- Put some cling film onto the counter, and transfer the mixture onto it. Wrap it, twist the ends and form it into a sausage shape. Then, place the salami in the fridge until it completely sets.
- When chocolate salami are set, dust them with powdered sugar, and cut a couple of slices.
- There, your delicious chocolate salami are done! Enjoy and Merry Christmas!
