y raspberry, mint and white chocolate mousse cake is light, refreshing and absolutely delicious! It is a perfect treat for any occasion!
To make my cakes first I will make chocolate chip sablé cookies that I’ll use as a base. I’m using dark chocolate chips, but you can put any chocolate you like – dark, milk or white.
Next I’ll make white chocolate mousse that I’ll enrich with a couple of drops of mint extract, because I really like that flavor combination. I will pour my mousse into prepared cake rings until I fill them halfway, and then I will put everything in the freezer. While my white chocolate and mint mousse is chilling I’ll make raspberry mousse that I’ll pour onto frozen white chocolate and mint mousse.
When my raspberry mousse sets, I will place it onto chocolate chip sable cookie and decorate with some fresh raspberries and mint leaves. Let’s make delicious and refreshing raspberry mint and white chocolate mousse! :)
