Orange and Olive Oil Loaf Cake
Today I’m making orange and oilve oil loaf cake. I just love loaf cakes – you can nibble them with your morning coffee, eat them as a dessert, or as a snack between meals. BTW, you can also check my caramel and walnut loaf cake, lemon cake or fruitcake recipes! Ok, let’s get back to the cake that I’m making today! It is so easy to make it! You just need to mix the dry ingredients in one bowl, liquid ingredients in another, and mix those two together! Easy-peasy! Transfer the batter into a loaf pan and bake it until it is done. Cool it on a reck and decorate with some candied oranges. Yum!
A Few Words About Olive Oil
It is not clear when and where olive trees were first domesticated. Modern olive tree most likely originated in ancient Persia and Mesopotamia, spreading towards Syria and Israel in the Mediterranean Basin where it was cultivated and later introduced to North Africa. Olive tree reached Greece sometime in the 28th century BC, and around 1500 BC, eastern coastal areas of the Mediterranean were most heavily cultivated. Evidence also suggests that olives were being grown in Crete as long ago as 2500 BC! The earliest surviving olive oil amphorae date to 3500 BC though the production of olive oil is assumed to have started before 4000 BC. Amazing, don’t you think?!
Olive oil is an excellent source of energy since one tablespoon of olive oil contains about 120 calories and 14 grams total fat. Around 80% of the calories in olives come from fat, but it is very important to point out that this is a healthy fat, known as oleic acid, that is proven to be highly beneficial for the heart health!
Now, as you already know, I’m living in the city of Split, Croatia. Here, by the Adriatic sea, olive trees are literally everywhere, so for me, the olive oil is an essential part of almost every meal! Yes, even my morning smoothie contains a good tablespoon of olive oil, along with fresh fruit and nuts! Yummy! So, I said to myself:”Tereza, you must make a sweet bite that will be enriched with this divine liquid!”, and – here it is! Therefore, let me show you how to make my awesome and simple orange and olive oil loaf cake!
Orange and Olive Oil Loaf Cake Recipe

Ingredients:- Orange juice 80g (2.8oz)
- Orange zest 6g (1.5Tsp)
- All purpose flour 85g (3oz)
- Almond flour 30g (1oz)
- Baking powder 4g (1Tsp)
- Eggs 50g (1 medium egg)
- Sugar 85g (3oz)
- Olive oil 55g (2oz)
- Apricot jam 100g (3.5oz)
- Candied orange slices
- Brush 15cmx8cm (6″x3″) loaf pan with melted butter. Then line it with parchment paper.
- To make the cake put sifted flour into a large bowl. Add sugar, almond flour, baking powder, orange zest, and stir well with a whisk. Put freshly squeezed orange juice into a measuring cup. Add one egg and olive oil, and stir with a whisk to combine. Pour liquid ingredients into the dry ones, and stir with a whisk until the mixture becomes uniform.
- Transfer the mixture into the prepared mold.
- Dip your small knife into olive oil and run it through the center of the batter. That way the cake won’t crack randomly when it rises. Bake the cake at 170°C (340°F) for about 50 minutes.
- Then take it out and let it cool on a wire rack.
- Heat apricot jam in the microwave, and brush the cake with it. Decorate it with some candied orange slices.
- There, your delicious orange and olive oil loaf cake is done! Enjoy!
