What is Entremet?
Entremet is a word that comes from Old French language, literally meaning “between servings”. In French cuisine it historically referred to small dishes served between courses. Today, however, it more commonly refers to a type of dessert. And what a dessert it is! Entremet is visually appealing cake made of many different layers. The combination of layers is endless – often there is some sort of sponge cake, maybe a crunchy layer, a mousse, crémeux, some jelly etc. The intention of the pastry chef is always the same – when you, sweetness lover, take a bite – the miraculous symphony of flavors and textures should blow your mind!
Passion Fruit and Milk Chocolate Entremet Layers
In this tutorial I will show you how to make passion fruit and milk chocolate entremet. Now, why that combination? Well, I love contrast! And, by that I mean contrast in color, contrast in taste and contrast in texture! So, I’ll show you how to balance tangy, exotic passion fruit and creamy milk chocolate. However, you will also see how my textures differ and compliment each other. Following my recipe, you will create five different layers and milk chocolate decoration. Of course, I will explain in detail how to make each layer, how to make the decoration, and how to assemble the entremet.
