What is Entremet?
Entremet is a word that comes from Old French language, literally meaning “between servings”. In French cuisine it historically referred to small dishes served between courses. Today, however, it more commonly refers to a type of dessert. And what a dessert it is! Entremet is visually appealing cake made of many different layers. The combination of layers is endless – often there is some sort of sponge cake, maybe a crunchy layer, a mousse, crémeux, some jelly etc. The intention of the pastry chef is always the same – when you, sweetness lover, take a bite – the miraculous symphony of flavors and textures should blow your mind!
Blueberry and Mascarpone Entremet Layers
In this tutorial I will show you how to make blueberry and mascarpone entremet. Following my recipe, you will create five different layers and white chocolate decoration. Of course, I will explain in detail how to make each layer, how to make the decoration, and how to assemble the entremet.
